6 medium sweet potatoes (about 3 ½ lbs.)
¼ c. firmly packed brown sugar
¼ c. honey
1 T. cornstarch
½ tsp. cinnamon
¼ tsp. nutmeg
2 tsp. grated orange rind
2 T. butter
1 small can chunk pineapple
¼ c. chopped walnuts (optional)

Directions:
Directions:
Cook sweet potatoes in boiling water to cover for 20-25 minutes or until fork tender. Let cool to touch, peel and cut into ½ inch slices. Arrange slices in a lightly greased 8x12" or square corning dish; set aside.

Combine brown sugar, next 6 ingredients and juice from pineapple in a saucepan. Cook over medium heat, stirring constantly until mixture begins to boil. Boil for 1 minute, stirring constantly; until mixture is thickened and bubbly. Pour over sweet potatoes. Sprinkle pineapple chunks and nuts on top. Cover and refrigerate 8 hours.

Remove dish from refrigerator and let stand for 30 minutes. Uncover and bake at 350º for 30 minutes or until thoroughly heated.

Note from Pattie: When I make this, I use orange juice instead of orange rind and I do not refrigerate it for 8 hours.
