6 medium sweet onions sliced on mandolin
6 tbsp butter
1 tsp sugar
1 tsp salt
dash of ground nutmeg
7 cups of beef broth
¼ cup sherry or to taste
6 slices of french bread
6 slices of Swiss cheese

Directions:
Directions:
1. Saute onions in butter until soft
2. Add sugar, salt and nutmeg cook down slightly but do not let onions burn, they should be a golden brown
3. Add beef broth and bring to a boil
4. Reduce heat and simmer for 10 minutes
5. Add sherry and adjust seasonings
6. Ladle the soup into 6 onion soup crocks
7. Top each with a piece of bread
8. Cover top of bread with Swiss cheese
9. Cook in preheated oven 350º for 10 minutes or until cheese is melted and bubbly
