Cream of Broccoli Soup Recipe

3 T butter
3 T flour
1/3 c leeks
3 c chicken stock
1/3 c onion
1 c light cream
1/3 c celery
1/3 c white wine
1 c broccoli
salt, pepper, thyme to taste

Directions:
Directions:
Melt butter in sauce pan, add leeks, onion, broccoli and celery.
Saute about 5 min over low heat. Blend in flour, then add chicken stock.
Cook until boiling, add salt, pepper and thyme and wine. Let simmer about 20 minutes til vegetables are tender. Puree in blender. Return to low heat and add cream just before serving. Any vegetable may be substituted.
