8 Potatoes- cold, boiled and diced
1/2 lb Mild American Cheese (I use Velveeta)
1/2 pt Coffee Cream (half and half works)
1 Sweet Green Pepper- optional
1 Sm can Pimento- optional
1/2 lb Ham- left over or baked ham
1 Onion- chopped

Directions:

Cut all ingredients into small cubes. Season and add cream. Bake for nearly 1 hour at 350º until bubbly.
