½ c. chopped onion
½ c. chopped celery
¼ c. chopped green pepper
½ c. shredded mild Cheddar cheese
1 11-oz. can white corn, drained
1 14.5-oz can French cut green beans, drained
1 10.75-oz. can cream of celery soup
1 8-oz. container sour cream
¼ of 16 oz. pkg. Ritz crackers (1 sleeve)
½ c. butter, melted

Preheat oven to 350 degrees. In a large bowl, combine first 8 ingredients. Spoon into a 2-quart casserole dish. Combine crushed crackers with melted butter and sprinkle on top of vegetables. Bake in preheated over for 45 minutes.
