1/3 cup pecans
1/3 cup dry bread crumbs, unseasoned
1/2 tsp each dried thyme, paprika and salt
1/4 cup Dijon mustard
1/4 cup Maple syrup
4 boneless skinless chicken breasts

Directions:
Directions:
1. In resealable plastic bag, coarsely crush pecans with rolling pin or meat mallet. In bowl, combine pecans, crumbs, thyme, paprika and salt; set aside. In small bowl, blend 1 tbsp mustard with maple syrup; set aside for dipping sauce.

2. Place remaining mustard in shallow dish (like a pyrex pie plate); add chicken, turning to coat all over. Place bread crumbs on sheet of wax paper. Press chicken into bread crumb mixture, turning to coat. Place chicken on baking sheet which has been sprayed with non-stick spray or greased with butter. Turn chicken to grease on both sides.

3. Bake on middle rack in preheated 400ºF oven for about 20 minutes. Serve with dipping sauce.
