4 cups rolled oats
2 cups sweetened shredded coconut
2 cups slivered almonds
¾ cup vegetable oil
½ cup honey
¼ cup brown sugar
1tsp vanilla
¾ tsp salt
3-4 tbsp Maple syrup
1 cup dried cranberries
1 cup raisins
1 cup cashews

Directions:

Preheat oven to 325 degrees. Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil, honey, brown sugar, salt and syrup. Pour over the oat mixture and stir with a wooden spoon. Pour onto 2 large baking sheets and evenly spread out. Bake for 10 minutes and stir. Rotate trays each time mixture is stirred. Bake for another 8-10 minutes and stir. Cook an additional 5-10 minutes to get desired color of doneness. Careful not to burn the mixture. It can from golden brown to black in seconds. Check at frequent intervals. Remove from oven and place into a large bowl. Add the dried cranberries, cashews, and raisins and stir. Allow the mixture to cool before placing in airtight containers. Other alternatives are dried cherries, apricots, blueberries, mini marshmallows, white chocolate chips, M & Ms, etc.
