1 cup hot water
1/2 cup butter
1/4 tsp salt
1/4 tsp sugar
1 cup flour
4 eggs ( approx)
2/3 cup grated gruyere cheese
1 tsp dry mustard
cayenne

Directions:
Directions:
Preheat oven to 375º
Combine the water, butter, salt and sugar and heat until the butter is melted.
Add the flour and stir vigorously with a wooden spoon until the dough forms a firm ball and breaks
away from the edges of the pan.
Remove the dough from the pan and beat in the eggs, one by one, beating ujntil the pate a chop is firm, smooth and waxy.
Add the cheese, mustard and a few grains of cayenne to the dough and blend thoroughly.
Butter a baking sheet and drop the dough by spoonfuls, or force it through the plain tube of a pastry bag,making small round mounds on the baking sheets.
Sprinkle with a little additional cheese and a little cayenne.
Bake at 375º for 35-40 minutes.
Turn off the heat and allow the gougeré to dry out in the oven for a few minutes before removing them.
This will prevent them from weeping.
Serve the gougeréé either warm or cold.

These are wonderful little puffs.
They are equally great formed into a ring by putting the little mounds right next to each other in a circle
on a buttered cookie sheet. Really a showy bread for a simple lunch.
Especially yummy warm with butter..........of course!!!!
