1 medium onion, cut into large chunks
5-6 carrots, cut into large chunks
1 medium sweet potato or yam, peeled and cut into large chunks
1 Tbs. coconut oil, or other oil

Directions:
Directions:
In a pot, add oil and onions and sauté for a few minutes. Stir. Add carrots and sweet potato and sauté for a few more minutes. The add enough water to cover the top of the carrots. Bring to a boil and cook until carrots are tender, about 15 to 20 minutes.

Pour all ingredients into a blender and blend until smooth. Add more water if needed. (When blending, be sure to hold down the blender lid, as the heat could cause it to come off.)

This soup goes very well with a hearty sandwich or burger, or as a side dish with any meal. It also makes a great baby food, and is something the whole family can enjoy together. This was Kian’s favorite baby food, and he still likes it.
