In a pot add a large amount of water and bring to a boil. Rinse sweet potatoes and add whole to the water. Boil until the sweet potatoes are tender with a fork, about 20 minutes. Remove from water and slice into rounds. Either mash with a fork and top with butter or coconut oil, or serve plain.

-Japanese Sweet Potatoes are different than other types of sweet potatoes or yams. They are sweeter and have a creamier texture. Kian doesn’t like sweet potatoes or yams, but he likes Japanese Sweet Potatoes.
-Japanese Sweet Potatoes can be found at Trader Joe’s, or many Natural Food Stores, or Asian markets.
-Sweet Potatoes, like other sweet vegetables, help reduce sweet cravings, and they help one feel more satisfied, relaxed and calm.
-These sweet potatoes go very well with a hot bowl of lentil soup or chili, or as a side dish with any meal.
