Ingredients: Package of Rice Spring Roll Wraps 1-2 blocks of Firm Tofu, cut into cubes Cooking Oil Soy Sauce Assorted Vegetables – (Leeks, Cabbage, Broccoli, Kale, Mushrooms, Frozen Corn)

Directions: |
Directions:In a wok or skillet, cook the onion or leek first, then add in your other veggies and cook until tender. In another skillet, fry the tofu cubes in oil and soy sauce. Fill a large pan with about one inch of water and heat until hot, but not boiling. Dip one Rice Spring Roll wrap into the hot water, and place the softened wrapper on a plate. Add a scoop of veggies, tofu, and sauce, then roll up like a burrito. |

Notes: 1. Rice Spring Roll Wraps can be found at many grocery stores and Asian markets. Use the largest ones you can find, which will make rolling them easier. 2. Children, and adults, will happily eat more veggies when they are rolled up in a fun Spring Roll. A plate of these rolls will make a satisfying dinner.
