48 frozen ravioli
1 (8 oz.) bag shredded mozzarella cheese, divided
1 (16 oz.) container whole milk ricotta cheese
1 c. Parmesan cheese
handful of fresh parsley, chopped
2 eggs

Meat Sauce:
1 lb. Italian sausage, casings removed
2 lbs. ground beef (ground chuck)
1 batch of Mom's sauce without the meatballs. (see Grandma's Sauce recipe under Grandma and GP's Sunday dinner.)

This recipe makes 1 pan of ravioli. For Christmas dinner I make 2 pans. This serves around 25.

Ricotta filling:
Mix together ricotta, eggs, handful of chopped parsley and ½ c. Parmesan cheese. Set aside.

Meat sauce:
Make a batch of Grandma's sauce without the meatballs. Brown Italian sausage and ground beef together. Drain completely. Add browned meat to prepared sauce. Stir to mix thoroughly and heat.

Assemble Ravioli:
In large baking dish, spray bottom and sides with cooking spray. Spread a layer a sauce in baking dish. Top with 1 layer of frozen ravioli (24). Add a layer of meat sauce (use a slotted spoon to retain as much meat and not as much sauce). Divide the ricotta mixture and layer half on top of the meat sauce. Add another layer of frozen ravioli. Add another layer of meat sauce. Mix half cup of mozzarella and Parmesan cheese together and sprinkle on top.

Repeat for another pan of 48 raviolis.

Cover with aluminum foil and bake for 45 minutes. Remove foil and bake uncovered for 10-15 minutes or until bubbly and hot in the center. Let sand for 10 minutes before serving.

From Pattie: Mom always made regular Ravioli with sauce for Christmas dinner. In 2016, we tried this recipe and it was a hit!
