Cake:
2 cups sugar
1 1/2 cups wesson oil
4 eggs
3 cups grated carrots
2 cups sifted plain flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon

Icing:
8 oz cream cheese, softened
1 stick butter
1 cup chopped pecans
1 lb confectioner's sugar
2 teaspoons vanilla

Directions:

Cake:
Preheat oven to 350º. Stir together flour, baking soda, salt and cinnamon. Combine the sugar and oil. Add eggs, one at a time. Add carrots. Add dry ingredients to wet mixture. Bake in 3 layers until done.

Cream Cheese Icing:
Beat all together and ice cake. Cover and refrigerate.
