2 cups light brown sugar
2 cups buttermilk
1 cup raisins
3-1/2 cups sifted flour
2 teaspoons soda
1 tablespoon cocoa
1 cup butter
1 cup jam
1 cup chopped nuts
3 eggs, separated
1 teaspoon cinnamon
1 teaspoon ground cloves

Cream butter and add the sifted brown sugar. Beat egg yolks separately and add to creamed mixture. Beat well. Add jam. Flour the nuts and raisins with about 1/4 cup of the flour. Add cocoa, cinnamon and cloves to the remaining flour and sift again. Dissolve soda in buttermilk and add alternately with flour mixture, beginning and ending with flour. Add floured raisins and nuts. Fold in stiffly-beaten egg whites. Oil a 9-inch tube pan, or 2 loaf pans, and line with brown paper or waxed paper. Turn batter into pans. Bake at 350 degrees about 2 hours, or until cake leaves side of pan.

Let cool and frost with Caramel Frosting.

This is such a special cake for Christmas. When Bryan (Bud) was working at Kountry Kupboard, Janet says she tried the jam cake that Flo (Florentino Moriote, owner) was selling. She told Flo that it was the worse jam cake she had ever tasted and that he should make "my mother-in-law"s" cake. He asked for the recipe and has been making it ever since. This is one of the legacies that 'Granny-Ruby' has passed down.
