3 c. zucchini, shredded
1 2/3 c. sugar
2/3 c. vegetable oil
2 tsp. vanilla
4 eggs
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder


Directions:
Directions:
In a large bowl, stir zucchini, sugar, oil, vanilla and eggs until well mixed. Stir in remaining ingredients and again mix well. Divide batter evenly between greased and floured loaf pans. Bake at 350º for 50 to 60 minutes or until a toothpick comes out clean. Makes 2 loaves.
