½ lb. fresh mushrooms, sliced
1 lb. fresh spinach
7 slices bacon
1 small can mandarin oranges
⅓ c. sliced almonds
¼ c. salad oil
½ tsp. salt
3 T. tarragon wine vinegar (or 3 T. wine vinegar with 1 T. tarragon)
1 tsp. sugar
½ tsp. dry mustard

Wash spinach, discard stems and drain. Wrap in paper towels and dry. Fry bacon crispy and drain. Brown almonds in the bacon grease, remove and drain. Crumble into bacon bits.

Dressing:
Whisk together salad oil, tarragon wine vinegar, salt, pepper, sugar, mustard and set aside.

Put spinach into bowl, add mushrooms, almonds, bacon and mandarin oranges. Pour dressing over salad. Toss lightly. Serve immediately.
