1 c. molasses
1 c. bacon fat
1 c. sugar
1 egg
4 tsp. baking soda
2/3 c. hot water
6 c. flour
1 1/2 tsp. cream of tartar
1 1/2 tsp. cinnamon
1/2 tsp. ginger

Filling:
1 pkg. dates
1 T. flour
1 c. water
1/2 c. sugar
1 tsp. vanilla
1/2 c. nuts (optional)

Directions:
Directions:
Mix and beat together first 4 ingredients. Put baking soda into hot water, then add vanilla and mix together. Add flour, cream of tartar and spices; stir well. Chill dough for 1 hour.

Mix all filling ingredients together; set aside. Roll out chilled dough; cut with a cookie cutter. Place cookie dough onto pan and add 1 tsp. of filling. Add top of cookie and continue until dough is gone.
