5 lbs potatoes, peeled and cubed
1 medium onion, finely chopped
5 cans of chicken broth
1 garlic clove, minced
1 ½ tsp salt
¼ tsp pepper
2 pkgs (8 oz) cream cheese, softened & cubed
1 c half & half (I usually substitue with sour cream)
¼ c butter

Toppings
1 lb bacon strips, cooked & crumbled
¾ c shredded sharp cheddar cheese
¼ c mince chives

Directions:
Directions:
Place potaoes and onion in a 6 qt. slow cooker; add broth, garlic, salt and pepper. Cook, covered on low for 8-10 hrs or until potatos are tender. Mash the potatos to desired consistency. Stir in the cream cheese, cream, and butter. Cook, cover about 15 minutes longer or until heated through. Add topping to your taste.
