1 Turkey or chicken carcass, ham bone or beef bones
Cold water
Celery ribs with leaves
Onion, whole unpeeled
Carrots, washed whole
Garlic cloves, whole unpeeled
1 or 2 bay leaves
Whole black pepper corns
Cinnamon sticks (turkey and chicken only)

*The amount of the ingredients will depend on how big the carcass or bones are. A large turkey carcass may require additional veggies for flavor*
Put stock base - meat and water in a large dutch oven or stock pot. Bring to a boil. Boil uncovered, for 5 minutes without stirring, Skim and discard foam from side of pot. Add remaining ingredients, stir. Bring to a boil. Reduce heat to medium low and simmer for about 3 hours, stirring occasionally, until meat is tender and falls off the bone. Remove from heat. Cool. Remove meat from broth and remove from bones. Discard bones. Strain stock through a sieve into a large container. Discard solids. Skim fat from stock, allow the stock to chill in the fridge, the fat will harden on the surface making it easy to lift off.
The stock can be used with or without the meats for soups or any recipe that calls for a good quality flavorful stock.
