1 2-3 lb. chuck roast
garlic salt

flour on wax paper
oil, about 2 tbsp.
onion, leave whole
1 pkg. carrots, cleaned
6 potatoes, peeled and cut into large pieces (optional)

Directions:
Directions:
Season both sides of beef roast with garlic salt, pepper and salt. Don't be stingy! Dredge roast in flour on both sides and brown in a skillet or dutch oven with a little oil until brown. Add 1 whole onion to the pan on the side. Lay carrots on the top of the roast. Lay potatoes round it. Pour water all around but not over top of the roast. Bake covered at 325º 2½-3 hours until tender and vegetables done. Remove meat and vegetables and make gravy from drippings.

Gravy: In a shaker or jar, put 1 cup water and 3 tbsp. or more flour. Shake to make smooth. When drippings are boiling gently, whisk in this mixture. You may also want to add a bouillon cube or salt and pepper. Taste and see!

Lazy person that I am, I no longer put the flour on the roast. I season it and put it in the oven at 425 degrees to brown then add the other ingredients and turn the oven back to 325 degrees, cover and bake until done. The key to a tender roast is "low and slow!" If you remember that it will almost always be delicious!
