1 lb. red potatoes, unpeeled and cut into chunks
1 cup bite-sized cauliflower florets
1/4 cup light sour cream
1 cup Kraft double cheddar shreds light

Directions:
Directions:
1. Place potatoes and cauliflower in large saucepan with enough water to cover. Bring to a boil on high heat. Reduce heat to medium, simmer 20 minutes or until vegetables are tender. Drain; return to pan.

2. Add sour cream, mash until vegetable mixture is light and fluffy. Stir in cheese.
