4 lg loin pork chops
2 Tbsp butter or margarine
1 C uncooked rice
1 C water
1 16oz can solid pack tomatoes
1 packet spanish seasoning for rice

Directions:
Directions:
Brown chops well
Butter the bottom and sides of a flat 1½ qt casserole
Pour uncooked rice into casserole disk to cover bottom
Break whole tomatoes with fork. Combine with water and seasoning and pour over rice.
Arrange pork chops on top. Spook a little tomato mixtureover chops.

Bake uncovered in 350º oven 60-70 minutes.


Variation:
Use cooked rice, tomato sauce or paste instead of solid pack tomatoes.
Chops ½ cooked, ⅓ C diced green peppers instead of pkg seasoning
Cook covered about 30 minutes.
