1 T salt
1 pkg. [16 oz] extra wide egg noodles
1 T extra virgin olive oil
1 medium yellow onion, diced
1/2 cup julienned carrots
2 cans [6 oz ea] tuna in water, drained
2 cans [10.75 oz ea] condensed cream of mushroom soup
2 cups frozen peas, thawed
12 slices American cheese, cut into strips
Salt and pepper to taste
1/4 cup thinly sliced green onions
1/4 cup red bell pepper, diced

Directions:
Directions:
Bring 8-12 cups of water, plus salt, to a rolling boil.
Add egg noodles and cook until al dente, approximately 8 minutes.
Drain noodles well, and return to pot.
Add olive oil to a large nonstick pan and cook onions and corrots until soft, approximately 4-6 minutes.
Add cream of mushroom soup, peas, cheese, warm egg noodles and salt and pepper to taste.
Constantly stir the mixture over low heat until combined and cheese has melted.
Garnish with green onions and red bell pepper.
Serve immediate, refrigerating any leftovers.
