5 strips bacon
1 small onion - chopped
3 lbs. stew beef
1 cup red wine
1/4 cup soy sauce
1/2 cup tomato sauce
1/4 cup flour
2 cups beef broth
3 Tbl fresh thyme
3 bay leaves
5 carrots - sliced
1 lb. small red potatoes

Directions:
Directions:
1. Brown bacon and onions in a fry pan. Remove and drain on paper towel. Pour off all but 2 tbl. of bacon fat
2. Sear beef on both sides - 2-3 minutes.
3. Put beef, bacon and onion in a crock pot
4. Add wine to the pan and reduce on simmer, scraping up the browned bits. Cook about 5 min.
5. Mix broth, tomato sauce and soy sauce together. Slowly add to the wine.
6. Whisk in flour until well mixed. Simmer for about 5 minutes.
7. Pour sauce over the meat in the crock pot. Add potatoes, carrots, bay leaves and thyme. Gently stir ingredients together
8. Cook on low for 6-8 hours.

Add salt and pepper to taste.
