1½ cup uncooked long grain or jasmine rice
1 small bunch fresh spinach
1 small purple onion, finely chopped
¾ - 1 cup crumbled feta cheese
1 lemon, zest and juice
2 tbsp rice vinegar
2 tbsp olive oil
salt and pepper to taste

Cook rice - cool to room temperature. Wash, dry and finely chop spinach. Add spinach, onion, feta and lemon zest to rice. Toss well. Squeeze lemon juice over salad, drizzle rice vinegar, oil, salt and pepper and toss well to coat.
