2 cups flour
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
6 tablespoons butter, cut into small pieces
½ cup mashed potato
½ cup buttermilk

Directions:
Directions:
Heat oven to 400°
Combine all dry ingredients, add butter and work into dry mixture with your fingers until it comes together. Beat sweet potato and buttermilk together and stir into flour mixture, mixing gently to form a soft dough.

Transfer to floured work surface and knead for 1 minute, then pat dough out in a 1 ½” thickness. Using cutter, press out rounds for biscuits.

Place on parchment covered sheet and bake for 10-12 minutes. Brush tops lightly with melted butter or egg white.
