1 lb. ground beef
4 medium-sized tomatoes, diced
1 head lettuce, chopped
4 green onions, chopped
2 sticks celery, diced
1 14 oz. can kidney beans, rinsed and drained
1 cup grated cheddar cheese
1 large bottle Catalina salad dressing
1 large bag Taco chips, crushed

Directions:

Fry the ground beef. Drain off the fat. Let cool.
Mix together the meat and the vegetables. Stir gently. Set in fridge to keep cool.
Just before serving add the cheddar cheese, salad dressing and the crushed taco chips.

I used to take this salad to our office parties and thus it became known as Muriel's Taco Salad! It was a great hit. Like my grand-daughter, Jodi said, "It's a meal all by itself!
