1 lb. pork sausage roll
1½ cups frozen cubed hash browns
¼ cup diced onion
¼ cup diced red or green peppers
4 large eggs
12 flour tortillas (8 inch)
½ cup shredded cheddar cheese
salt and pepper to taste
picante sauce (optional)
sour cream (optional)

Directions:
Directions:
1. In a large skillet cook sausage over medium heat until no longer pink: drain.
2. Add the potatoes, onion, and pepper cook until tender.
3. Lightly beat eggs with salt and pepper.
4. Add eggs to mixture cook and stir until set.
5. Spoon filling mixture down center of each tortilla. Sprinkle with cheese. fold sides and ends over filling.


If eating immediately, place burritos folded side down on a baking sheet bake on 300º for about 10 minutes to melt cheese and make tortilla slightly crunchy.

If freezing, wrap each burrito in wax paper and foil. When ready to cook remove paper and foil. Place burritos in a 300º oven for 20-25 minutes or until center is warmed.

If heating in the microwave heat on high for 2- 2½ minutes or until warmed through.
