1 large Eggplant
1 medium Onion, chopped
1 lb. Ground Meat (beef or turkey)
1 recipe of Corn Bread
1 Garlic Pod sieved or Garlic Salt
2 T Margarine
Salt, Pepper to taste
Smoke Liquid to taste

Directions:
Directions:
Scoop out eggplant and cut into small pieces. In saucepan cook eggplant with small amount of water (½-1 cup),onion, and garlic until tender. Brown ground meat in skillet with margarine and add seasonings to taste. Mix ground meat, cornbread and eggplant together. First meat, then eggplant with stuffing. Mound on top of eggplant shells and place in ½-1 inch water in 9"x13" oblong dish. Bake at 350º to 400º for 30 minutes or until brown.
