Ingredients: 1 baked pie crust ------------------------ 3 large egg whites 1/4 tsp cream of tartar 6 Tbsp sugar 1/2 tsp vanilla or lemon juice * for piled high meringue, make double recipe

Directions:Prepare pie crust: prick bottom of crust and bake at 450º for 11 minutes Beat egg whites and cream of tartar in medium bowl on high until foamy Beat in sugar, 1 Tbsp at a time until stiff and glossy; do not overbeat Beat in vanilla Set aside |

Ingredients: 3 large egg yolks 1½ cups sugar ⅓ cup plus 1 Tbsp cornstarch 1½ cups water 3 Tbsp butter ½ cup lemon juice 2-3 drops yellow food color

Directions:Preheat oven to 400º Beat egg yolks in small bowl and set aside Mix sugar and cornstarch in saucepan gradually stir in water and cook over medium heat Stir constantly until mixture thickens; bring to a rolling boil while continuing to stir for 1 minute Immediately stir ½ of hot mixture into egg yolks then stir all back into saucepan Bring back to rolling boil while stirring 1 more minute Remove from heat and stir in butter, lemon juice and food color Pour into baked pie crust Spoon prepared meringue over HOT mixture, sealing edges well Bake 10-12 minutes until meringue is lightly browned |
