Ingredients:  
1 lb dry noodles of choice, cooked and drained; [try lo mein, linguine or angel hair]
1/4 cup soy sauce
2 T rice vinegar
2 T brown sugar
1 T fresh ginger, grated
3 cloves garlic, minced
1/2 tsp chili paste or Sriracha
3 to 4 T canola oil
2 to 3 T toasted sesame oil
Optional toppings:
Green onions, thinly sliced
Toasted sesame seeds
Cucumger, thinly sliced
Red bell pepper, thinly sliced

Directions:
Directions:
While noodles are cooking, combine soy sauce, rice vinegar, brown sugar. ginger, garlic, chili paste and canola oil in a small bowl and whisk until thoroughly combined.
Add the sesame oil gradually, tasting and adjusting ingredients as desired.
Toss the sauce with the warm noodles until fully coated.
Add toppings of choice and serve warm or cold.
Refrigerate any leftovers.
