1½ T olive oil
1/2 lb. chicken, boneless breast, diced 1/2 inch
1/4 lb. Andouille sausage, sliced
1/4 cup peppers, diced
1/4 cup onions. diced
1/2 tsp garlic, minced
2 tsp Cajun seasoning
1/4 cup tomatoes diced
1 cup chicken broth
4 cups fettuccine, cooked

Directions:
Directions:
Heat the oil in a heavy skillet. Add the chicken and cook until firm.
Add the peppers and onions and cook until just soft.
Toss in the sausage, garlic and tomatoes.
Cook for 1 minute.
Add the seasoning and broth. Cook for 3 minutes.
Toss in the cooked pasta and heat. Serve warm.
