Ingredients:  
1 lb. Italian sausage or 1 lb. breakfast sausage (seasoned with 1 t. each of oregano, basil, parsley and 1/2 t. each of onion powder and pepper)
12 eggs
4 oz. cream cheese
8 oz. ricotta cheese
2 Roma tomatoes, diced or 12 cherry tomatoes
basil

Cook and drain sausage. Spread on greased 9 x 13 in. pan. Blend eggs and cream cheese in blender and pour over sausage. Dot casserole with ricotta cheese and tomatoes. Sprinkle with basil. Bake at 400º for 35-40 minutes or until set.
