1 (3 pound) boneless chuck or sirloin roast, trimmed
3 garlic cloves, chopped
1 tsp. olive oil
2 cups chopped onion
2 pounds potatoes, peeled and cut into 2 inch pieces
4 large carrots
1 c. mushrooms
2 packets beef bouillon
1 bay leaf
fresh thyme leaves (optional)

Directions:
Directions:
Pan sear roast on all sides with olive oil.
Put oil in pan and cook roast in oven for 30 min at 375º F.
In a pan sauté garlic, onions and carrots.
Take roast out of oven and add salt, garlic, onions, carrots and mushrooms.
Add two envelopes of beef bouillon with 1 cup of cold water.
Cook in oven for 1 hr and 15 min. at 325º F.
