3-4 eggs
Pinch of Salt
Flour, amount determined during prep

Directions:
Directions:
1. Beat 3-4 eggs and pinch of salt.
2. Gradually add flour and mix well until you have a ball dough that can be easily handled.
3. Roll out dough on a floured board to about 1/4 inch thick.
4. Keep sprinkling flour as you roll and dough won't stick to board and rolling pin.
5. When flat, loosely roll dough up like a jelly-roll and slice 1/4 to 1/2 inch or as wide as you like.
6. Let dough sit to dry until ready to use.
7. When dry, shake out the little curls so noodles are loose.
8. Let dry a few more minutes.
9. You can use immediately or put them in a zip lock bag and freeze for later use.
10. This makes more than enough for a large pot of chicken and noodles.
