¾ cup onion, minced
1½ cups celery, chopped (stalks and leaves)
1 cup butter (2 sticks)
9 cups white bread, cubed
2 tsp. salt
1½ tsp. crushed sage leaves
1 tsp. thyme leaves
½ tsp. pepper
1 small can (7 to 12 oz.) chopped mushrooms (optional)

Directions:

In a large skillet, cook and stir onion and celery in butter until onion is tender.
Stir in about ⅓ of the bread cubes.
Transfer to deep bowl. Add remaining ingredients and toss. Do not over mix or the stuffing will become mushy.
Stuff the turkey or chicken just before roasting.

Serves 9 cups (enough for a 12-pound turkey; for larger turkey, increase ingredients accordingly). Allow ¾ cup stuffing for each pound of ready-to-cook chicken or turkey.
