cup onion, minced
1 cups celery, chopped (stalks and leaves)
1 cup butter (2 sticks)
9 cups white bread, cubed
2 tsp. salt
1 tsp. crushed sage leaves
1 tsp. thyme leaves
tsp. pepper
1 small can (7 to 12 oz.) chopped mushrooms (optional)

Directions:
Directions:
In a large skillet, cook and stir onion and celery in butter until onion is tender.
Stir in about ⅓ of the bread cubes.
Transfer to deep bowl. Add remaining ingredients and toss. Do not over mix or the stuffing will become mushy.
Stuff the turkey or chicken just before roasting.

Serves 9 cups (enough for a 12-pound turkey; for larger turkey, increase ingredients accordingly). Allow cup stuffing for each pound of ready-to-cook chicken or turkey.
