1/4 cup rice vinegar
2 tbsp spicy honey mustard
1/3 cup olive oil
2 tbsp snipped fresh chives
1/4 tsp salt
1/8 tsp ground black pepper
4 medium cucumbers, peeled and thinly sliced
1 1/2 cups cherry tomatoes, halved

Directions:

1. Combine rice vinegar, honey mustard, olive oil, chives, salt and pepper in a screw top jar.
2. Cover and shake.
3. Pour over cucumbers, cover and refrigerate for several hours or overnight.
4. Stir in tomatoes just before serving.
