4 tablespoons corn starch
2 teaspoons salt
1 teaspoon dry mustard
1/2 teaspoon black pepper
3-5 cups milk
2 tablespoons unsalted butter
16 ounces shredded cheddar cheese
8 ounces elbow macaroni cooked 6 minutes and drained (should be a little underdone)

Heat oven to 375º. In medium saucepan combine corn starch, salt, dry mustard and pepper. Stir in milk slowly and whisk until smooth. Add butter and stirring constantly bring to a boil over medium-high heat. Boil for 1 minute and remove from heat. Reserve 1/2 cup cheese for topping and stir the rest into sauce until melted. Combine sauce and pasta in large casserole dish and top with remaining cheese. Bake uncovered for 25 minutes until hot and bubbly.

The original recipe came from the back of a Mueller's elbow macaroni but here, I've doubled the sauce because we like it very cheesy! This is one of Poppa Paul's favorite dishes, especially if you use sharp cheese on the top, make sure the top is very crusty and use extra pepper.
