4 tablespoons unsalted butter
3 eggs
1 cup all-purpose flour
1 cup milk
1 tablespoon chopped onion
1 teaspoon salt
1 teaspoon baking powder
1 pound grated cheddar cheese
20 oz. frozen chopped spinach (defrosted & drained)

Directions:

Preheat oven to 350º. Put butter in 9x13x2 pan and melt in oven.
In large bowl beat eggs well then add flour, milk, salt, and baking powder. Mix well then add cheese, spinach, onion and mix well. Place in baking dish and bake for 35 minutes. Cut into squares. Can be frozen after baking and reheated at 325º for 12 minutes.
