Brine:
3T kosher salt
3/4 c sugar
2 c hot water
2 c cold water
2 pork tenderloins

Rub:
2 large garlic cloves, minced
2" fresh ginger, grated or minced (2T)
2 medium scallions, minced
2 T light brown sugar
1 T hoisin sauce
1 T sesame oil
1 t Asian chile paste (or sub 1/2 t red chile flakes)
1/4 t Five Spice powder
1/4 t salt

Directions:
Directions:
Dissolve salt and sugar in hot water; add cold water. Add tenderloins, cover, and refrigerate for about an hour. Remove from brine and rinse well. Drain on paper towels.

Rub tenderloins with wet rub and cook on a medium hot grill until desired temperature is reached.
