1 cup chopped pecans
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup plain flour
1 teaspoon baking powder
1 teaspoon ginger
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg

Filling:
6 oz cream cheese, softened
4 Tablespoons butter
1/2 teaspoon vanilla
1 cup powdered sugar

Cake:
Grease 15 x 10 x 1 pan with Pam and then line with parchment paper.Beat eggs for 3 minutes. Then add sugar, pumpkin and lemon juice. Sift together dry ingredients. Fold dry ingredients into pumpkin mixture.
Spread in 15 X 10 X 1 pan that has been sprayed with Pam. Top with nuts. Bake at 375º for 15 minutes.
Turn out on towel that has been sprinkled with powdered sugar. Start at narrow end and roll towel and cake together. Cool. Unroll. Spread with filling. Reroll.

Filling:
Beat cream cheese. Add other ingredients and mix until smooth.
