2 large cloves garlic
2 medium onions
1/2 fennel bulb
1 red pepper

1 large bottle clamato
2 cans diced tomatoes
1 can V8

3-4 sprigs fresh thyme
1 tsp Herbes de Provence*
1/4-1/2 tsp red pepper flakes

1 lb fish, cut in 1.5 inch cubes
1 jar small oysters
1/2 lb scallops
1 lb shrimp
clams (1 can minced clams works)

1 small can tomato paste

Directions:
Directions:
Cook vegetables in olive oil and butter until soft. Add Clamato, tomatoes, V8 and herbs, bring to boil. Add fish, cook on medium until done. Add small can of tomato paste to thicken while fish is cooking.

* I got this mix at a higher-end-than-Winco grocery store; here are ingredients to make your own. Apparently the essential ingredients are the lavender and fennel seeds, If I were to make my own I'd cut this recipe in half a couple of times.

2 T rosemary
1 T tarragon
1 T basil
1 T fennel seeds
1 tsp mint
1 tsp chervil
1 tsp lavender

I bought two whole tunas this year, and had about a pound or so of leftover bits and pieces, so decided to make this. It was pretty delicious :) It freezes well.
