2 whole chickens, cut and separated (we like thighs and drumsticks and buy those instead)
1/4 cup extra virgin olive oil
2 tablespoons whole grain mustard
4 cloves garlic
1 teaspoon fennel seeds (I buy this in powder form)
1 teaspoon apple cider vinegar
2 teaspoons sea salt

Directions:

Preheat oven to 400 degrees.

In a large bowl, toss all of the ingredients and allow the chicken to marinate for 15 minutes in the refrigerator. Transfer the chicken to a baking dish and spoon any excess marinade over it. Bake for 20 to 30 minutes, when a nice crust forms.
