1 lb. boneless skinless chicken breasts, chopped OR 2 lg. cans white chicken white meat
1 medium onion
1 tbsp. olive oil
2 garlic cloves (or 2 tsp. chopped garlic from a jar)
2 cans (14 oz. each) chicken broth
1 can (4 oz.) chopped green chilies
2 tsp ground cumin
2 tsp. dried oregano
1½ tsp. cayenne pepper-Optional
3 cans (14½ oz. each) great northern beans, drained, divided
1 c. (4 oz.) shredded Monterey Jack cheese
chopped jalapeno pepper-Optional

In Dutch oven over medium heat, cook chicken and onion in oil until lightly browned. Add garlic and cook 1 minute longer. Stir in the broth, chilies, cumin, oregano and cayenne. Bring to a boil. Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer of 20-30 minutes. Top each serving with cheese and/or jalapeño pepper if desired.
