1/2 cup peanut butter
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup water
1 tablespoon sesame oil
2 tablespoons sriracha
3 cloves garlic, minced
1 tablespoon fresh ginger, peeled and minced
2 tablespoons brown sugar
1 package linguine noodles
1 red bell pepper, sliced
1 package broccoli florets, steamed until crisp-tender and cooled
6 carrots, peeled and grated or thinly sliced
1/2 cup cilantro, rinsed and roughly chopped
1/4 cup roasted and salted peanuts, roughly chopped

Cook linguine noodles until al dente, according to package directions. Rinse, drain and place in large bowl. Meanwhile, in a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, water, sesame oil, sriracha, garlic, ginger and brown sugar. Add sliced bell pepper, steamed and cooled broccoli and grated carrots to the drained noodles. Pour peanut butter mixture over all and toss to coat. Cover and chill for one hour or longer. When ready to serve, top with chopped peanuts and cilantro.
