3/4 cup minced onion
1 1/2 cups chopped celery
1 cup butter
9 cups soft bread cubes
2 teaspoons salt
1 1/2 teaspoons crushed sage leaves
1 teaspoon thyme leaves
1/2 teaspoon pepper

Allow 3/4 cup stuffing for each pound of chicken or turkey. The recipe above makes 9 cups, enough for a 12 lb turkey.

In a large skillet, cook and stir onion and celery in butter until onion is tender. Stir in about 1/3 of the bread cubes. Turn into deep bowl. Add remaining ingredients and toss. Stuff turkey just before roasting.

My My always makes extra and bakes it in a separate casserole dish. Then remove stuffing from the turkey when the turkey is finished cooking and mix the turkey stuffing with the casserole stuffing.

Be sure to save all of the bread crust and ends to feed the ducks! Drive the golf cart down the street and you will find all of the ducks (and one turtle) waiting for you at the Dos Lagos pond.
