2c sifted all-purpose flour
1/4c plus 2Tbsp granulated sugar
1Tbsp plus 1tsp baking powder
4Tbsp cold unsalted butter, cut into bits
1/2c milk
1 large egg

Directions:
Preheat the oven to 425º . Butter a 8x1 1/2inch cake pan. Dust the pan with flour, shaking out the excess. To make the shortcake, in a food processor, put the flour, granulated sugar, and baking powder. Pulse to mix. Add the butter in three additions, pulsing after each addition. Transfer the mixture to a large bowl. In a small bowl, whisk together the milk and egg. Add this to the flour mixture and stir briskly until the dough just holds together. Turn the dough out onto a well-floured surface and knead lightly with floured fingertips 10 times, or until a smooth dough forms. Put the dough in the center of the prepared pan. Using your fingertips, gently spread it evenly, working from the center towards the edges. Bake for 15-20 minutes, until golden brown and a toothpick inserted in the center comes out clean. Let the shortcake cool in the pan on a rack for about 10 minutes. Turn out of the pan onto the rack and let it cool completely. When cooled, put desired berry and whipped topping generously on top.
