4 Goose Breasts, cut in long strips ¼"-¾" wide
3.5 oz Liquid Smoke
½ cup Table salt
¼ cup Pepper
Water

Directions:
Directions:
Add cut goose strips in liquid smoke and salt and pepper. Mix thoroughly in bowl with meat strips. Add water such that the meat will be covered by the solution. Let solution soak for 24 hrs. Smoke the meat for approximately 4-5 hrs. or until dried. Add 6-8 charcoals to speed the cooking and smoke production. Rotate trays every 1½ hours. Let stand for 12 hours for meat to air dry. Keep in freezer until ready to use.
