1 T Olive oil blend
4 ea Apples, peeled/cored, diced
4 ea Shallots, minced
4 ea Garlic cloves, minced
1/4 C Fresh Thyme
4 C Apple juice/Apple cider
1 C Apple Cider Vinegar
2 C Olive oil (EVO)
Kosher Salt, to taste
Black pepper, ground, to taste
1/2 C Honey

Directions:
Directions:
Caramelize apples, shallots, garlic and thyme in a heavy bottom pot.
Add apple juice and let simmer for 10 minutes.
Place in robot coupe or use stick blender to puree. Slowly add Apple cider vinegar while processing, and then add oil until emulsified.
Season to taste with salt and pepper. Add honey.
Label and store.
