2 small Chickens,cooked and deboned
Salt & Pepper
¼ cup Vegetable Oil
1 lb Smoked Sausage, cut into ¼" slices
1 Large Onion, chopped
3 cloves Garlic, minced
1 Green Pepper, seeded and chopped
4 Green Onions, sliced, white and green parts
½ lb Small Shrimp, peeled, deveined and cooked *(optional)
1 bottle of Roux mix to package

Directions:

Make roux according to jar and then simmer. In a skillet add oil, onions, bell pepper, garlic sauté, then add the sausage and cook until browned, then remove. Add chicken, sausage and vegetables to roux and simmer for 45 minutes. Serve with rice and crackers.
